This is possible because we can artificially incubate\r\neggs and hatch chicks &#8211; because the breeding hens do not need to incubate their\r\neggs, each one can produce many more\r\neggs and chicks. Artificial incubation also\r\nreduces the chance that diseases will be\r\ntransmitted from mother to chick.\r\nThe transmission of disease between\r\ngenerations can still occur, especially during the collection and transport of eggs.\r\nIf eggs are infected with micro-organisms\r\nthat are harmful to the egg contents this is\r\nbad for food safety, and animal and human\r\nhealth, so anything that can reduce this\r\nwill help maintain biosecurity and reduce\r\nthe risk further for the consumer. <br>\r\n\r\n\r\n<h2>The cuticle<\/h2>\r\nThe cuticle is a protein layer which covers\r\nthe surface of the egg and fills the pores\r\nin the shell which allow air inside for the\r\ngrowing chick. The cuticle is the egg\u2019s first\r\nline of defence against bacteria that could\r\ncome from the mother as the egg is laid\r\nand from the environment e.g. from contact with egg collecting belts or handling\r\nequipment.\r\nNot all eggs have cuticles of the same\r\nquality \u2013 natural variation between hens\r\nmeans that some cuticles are better than\r\nothers. This variation in cuticle quality means that some eggs are more vulnerable\r\nto invasion by bacteria and studies have\r\nshown that eggs with good quality cuticles\r\nare almost never infected with E. coli whereas eggs with poor quality cuticles were\r\ninfected more often. If we can select for\r\nbetter cuticle quality, this will reduce the\r\ncontamination of eggs by E. coli and other\r\npotentially harmful micro-organisms.<br><br>\r\n\r\n\r\n\r\n\r\n<blockquote>We have developed ways to measure the amount of cuticle individual hens\r\ndeposit on their eggs and link that to information about the hen\u2019s genetics, some\r\nof which we obtain by sequencing their\r\nDNA. This combination of genetic information and cuticle quality data will allow\r\nus to accurately select or breed hens that\r\nlay eggs with high quality cuticles that are\r\nbetter protected against bacteria.\r\nWe have also learned a lot more about\r\nhow the cuticle is made, just as the egg\r\nis laid, and how other factors such as the\r\nbird\u2019s environment, stress, hormone levels\r\nand the age of the hen and the egg affect\r\ncuticle quality.<\/blockquote>\r\n\r\n <br>\r\n<h2>How do we measure cuticle quality?<\/h2>\r\nWe work with chemists at the University\r\nof Edinburgh to develop light-based techniques to measure cuticle quality. White\r\nlight is made up of a spectrum of many\r\ndifferent wavelengths of light and all materials, including the egg\u2019s cuticle, absorb and\r\nreflect light from different parts of this spectrum. We can use a machine called a spectrophotometer to measure the amount of\r\nlight reflected at any given wavelength\r\nfrom different eggs and compare them, to\r\nget a measure of cuticle quality. <br><br>\r\n\r\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/lohmann-breeders.com\/media\/2020\/08\/foto44.jpg\" alt=\"\" width=\"500\" height=\"800\" class=\"imgcenter\" \/>\r\n\r\n\r\nWe also use techniques such as fluorescence lifetimes, steady state fluorescence\r\nand infrared spectroscopy to tell us more\r\nabout cuticle quality and the chemical\r\nstructures involved. Some of our methods\r\ninvolve staining the eggs to reveal more\r\nabout their cuticle (as in the Cute Egg: Staining activity in our Cute Egg kit), and we\r\nare also investigating the many different\r\nproteins that make up the cuticle.<br>\r\n\r\n<h2>Our other partners<\/h2>\r\nScientists at the University of Glasgow\r\nmeasure thousands of eggs each week\r\nwhich we can combine with the genetic\r\ninformation we have for each egg and bird\r\nin the study. They also study the bacteria\r\nin eggs with very good and very poor cuticles to find out how cuticle quality affects\r\ninvasion by bacteria.\r\nWe also work with industrial partners,\r\nwho provide us with egg samples and\r\ngenetic information, sharing with us both\r\ntheir sample resources and their knowledge.
