This means\r\nthe shell must be clean and enough\r\nstrong to survive handling and transportation\r\nprocedures, especially during the\r\nlast weeks of production. In addition to\r\nthese primary shell quality criteria and\r\nadequate egg weight, the shell colour\r\nalso matters to consumers.<\/blockquote>\r\n<br><br>\r\n\r\nEggshell colour varies considerably\r\nbetween different poultry breeds and\r\nis determined by pigments. These pigments\r\nare secreted from the oviduct in\r\nlast stages of egg formation. There is no\r\nmajor difference in internal egg quality\r\nbetween white, brown or tinted eggs.<br><br>\r\n\r\n\r\n\r\n\r\n\r\nConsumer groups in different countries\r\nin the world, however, show distinct\r\npreferences for a particular eggshell colour.\r\nThese preferences seem to be more\r\ndefined by the traditional and cultural habits\r\nof individual countries.<br><br>\r\n\r\n\r\n\r\n<blockquote>For instance, whereas consumers\r\nin North American countries or Mexico\r\nprefer almost 100% white eggs, the consumption\r\nof brown eggs in African countries\r\nis about 90%.<\/blockquote>\r\n<br><br>\r\n\r\nThe situation in Europe is more or less\r\nsimilar. Many countries in Europe such as\r\nPortugal, Great Britain or Bulgaria consume\r\nalmost 100% brown eggs. An exception\r\nis Scandinavian countries with the\r\ngreatest demand being for white eggs.\r\nConsumers in other European countries\r\nsuch as Russia, Germany, the Netherlands\r\nor Greece eat eggs with both shell colours.\r\n<strong>(Figure 1)<\/strong><br><br>\r\n\r\n\r\n<img decoding=\"async\" src=\"https:\/\/lohmann-breeders.com\/media\/2020\/07\/WHITE-OR-BROWN-1-1.jpg\" alt=\"\" width=\"80%\" class=\"imgcenter\" \/>\r\n<br><br>\r\n\r\n<em><strong>Figure 1:<\/strong> European Egg Market of brown &#038; white eggs<\/em>\r\n<br><br><br><br>\r\n\r\n\r\nThis situation changes completely\r\nwhen we consider the major egg producers\r\nin Asia such as China and Japan. In\r\nChina nearly 70% of total egg production\r\nis brown eggs and only about 5% is white\r\neggs. The remaining 25% of total egg production\r\nin China is tinted eggs. <br>It is interesting\r\nto note that China\u2019s tinted egg production\r\nalone is more than the entire egg\r\nproduction in the United States of America.\r\nIt is important to be aware that these\r\nstatistics for different countries change\r\nover time and are therefore not constant.\r\nNevertheless, the fact remains that the proportion\r\nof white and brown eggs consumed\r\nworldwide is roughly 50:50. <strong>(Figure 2)<\/strong><br><br>\r\n\r\n\r\n<img decoding=\"async\" src=\"https:\/\/lohmann-breeders.com\/media\/2020\/07\/WHITE-OR-BROWN-2.jpg\" alt=\"\" width=\"80%\" class=\"imgcenter\" \/>\r\n<br><br>\r\n\r\n<em><strong>Figure 2:<\/strong> Estimated percentage of brown and white eggs worldwide<\/em>\r\n<br><br><br><br>\r\n\r\n<strong>Egg market in the Middle East<\/strong><br><br>\r\n\r\nThe egg market in Middle Eastern countries\r\nhas been influenced by different crises\r\nand challenges for many years.<br><br>\r\n\r\n\r\n\r\n<blockquote>Conflicts in this region, besides outbreaks\r\nof diseases such as avian influenza or Newcastle\r\ndisease, are among the main challenges\r\nfacing this large egg market. The\r\nmain players in the Middle East market are\r\nmore or less always the same and include\r\nTurkey, Iran, Saudi Arabia and Pakistan. <br>Of\r\nthese countries, Turkey exports 30% of its\r\nproduction to neighbouring countries.\r\nAlmost 80% of egg production in Turkey\r\nis accounted for by brown eggs with the\r\nremaining 20% being white eggs.<\/blockquote>\r\n<br><br>\r\n\r\nThe preference for a certain egg colour in\r\nthis region shows a similar pattern to that\r\ndescribed for the world. In Iraq for example,\r\nbrown eggs are mostly consumed with the\r\nexception of some areas in the northern\r\npart of country where white eggs are preferred.\r\nIn contrast, Pakistan and Iran prefer\r\n100% white eggs, although it appears that\r\nthis pattern is slowly changing as far as Iran\r\nis concerned.<br><br>\r\n\r\n<img decoding=\"async\" src=\"https:\/\/lohmann-breeders.com\/media\/2020\/07\/WHITE-OR-BROWN-4.jpg\" alt=\"\" width=\"80%\" class=\"imgcenter\" \/>\r\n<br><br>\r\n\r\n<em><strong>Image 1.<\/strong> Managing director of \u201cToyoor Nasim Co.\u201d Mr Khorasanizadeh and his\r\nsons as production managers, a real example of a family business<\/em>\r\n\r\n<em><strong>| Image 2.<\/strong> Parent Stock farm compound of \u201cToyoor Nasim\u201d close to city of\r\nIsfahan<\/em><br><br><br><br>\r\n\r\n\r\n<strong>First brown breeders in Iranian\r\nMarket<\/strong><br><br>\r\n\r\nFor the first time, the Toyoor Nasim company\r\ndecided to import a parent stock flock\r\nof the LOHMANN BROWN-LITE breed into\r\nthe Iranian market. In addition to large integrations\r\nin the poultry business in Iran,\r\nthere are still some privately-owned family\r\ncompanies active in this sector. Toyoor Nasim\r\nis one of the best examples. <br>It is run by\r\nowner and managing director, Mr Khorasanizadeh,\r\nwhose sons are the production\r\nmanagers. Their flock started production\r\nsome weeks ago with an excellent laying\r\nperformance selling high quality, brown\r\nday-old chicks to the market. <br>Consequently,\r\nthe Iranian egg market will not be 100%\r\nwhite in the near future. Only time will\r\ntell to what extent the preference of egg\r\nshell colour will change in this market or in\r\nother countries in the world.
